This pineapple upside down cake recipe is a classic version of the popular cake recipe with macadamia nuts and subtle coconut flavors for a tropical cake delight. Some of the ingredients you will need for the topping in this recipe include melted unsalted butter, packed brown sugar, Diamond macadamia nuts roughly chopped, crushed pineapple well drained. For the cake part of the recipe some things you will need include softened unsalted butter, granulated sugar, room temperature eggs, vanilla, flour, baking powder, and coconut milk. To start you will want to preheat the oven to 350 degrees Fahrenheit. Wrap the outside of a 9 inch springform pan with aluminum foil to prevent any leaks during baking. For the topping you will pour melted butter into the bottom of the prepared pan. Brush some of the butter up the sides of the pan to lightly grease them. Sprinkle the brown sugar over the melted butter in the bottom of the pan, top with the macadamia nuts, followed by the pineapple, set aside. Now its time to make the cake. In the bowl of a stand mixer fit with a paddle attachment, cream together the butter and the sugar on medium speed for two minutes until light and fluffy. Add in the eggs, one at a time, mixing well after each egg. Add the vanilla and mix until combined. Scrape down the side of the bowl as needed.
